Brewing Buddie's review of Lucky 7's IPA (B51)

 

Mmmmm... Cascade is strong on the nose. Earthy, Grassy goodness. Picking up some Amarillo as well. Slight Malt fights it way through the hop aroma.
Large medium size bubbled head. Just slightly off-white. Brilliant Bronze color. Just simply amazing clarity. Lots of raising CO2. Excellent head retention and lacing.
Wow this is an awesome tasting beer. Slight malt sweetness at the front. Cascades and Amarillo take over mid-tongue. By the finish it is all about the Hops. Finishes clean, with minimal Lingering bitterness. Starts to finish a little sweeter as it warms. Nice mouthfeel. Carbonation is perfect. Slight, ever so slight hot alcohol pokes its way through, but is carried by the wonderful balance of hops and malts. Hard to believe that this is a 1.078!
Overall I do not know if I have conveyed that I enjoyed this beer. If that is the case, let me just say that this is a friggin' AWESOME beer! I wish I could brew a Pale like this. I think that I would need to use bottled water to achieve this wonderfulness. My water is more conducive to Browns and Darks.

Tsali Pale Ale (B54)

It has been 3-4 months since I have found a chance to brew. The opportunity presented itself tonight while working on statistics homework. I put together a simple pale ale.

Ingredients -3 lbs XL DME, .88 crystal 20, .50 crystal 40, .27 carapils, .45 pearle @ 60mins, .5 cascade @ 15mins, 1tsp Irish moss @ 15mins, .5 cascade at flame out, US-05 yeast

Steeped the grains @ 150F-160F for 30 mins. Added the DME and followed the recipe. 11.2 SRM, 33ish IBUs, OG 1.062.

Nice to be brewing again!

Lucky 7's IPA in the Bottle (B51)

Finally got this one in the bottle. It smelled fantastic. The taste was a little astringent at this time but I am hoping it conditions out.

So, I'll review. Brewed 11.9.08;Secondary 11.23.08; Polyclar 12.6.08; Dry Hopped & Oaked 12.16.08. Temps all over the place. I'll never be able to reproduce this batch. BAD BREWER!

I batch primed with 2oz of corn sugar.

I couldn't get a FG so I am sticking with the 7.7% ABV, with 77 IBUs, and 7.7 SRM.

Lucky 7's IPA (B51) Dry Hopped & Oaked

This poor batch keeps getting ignored. I racked it on 11.23 and forgot about it until 12.06 when I added polyclar. I forgot about it again until today.

Today I dry hopped with 1oz of Cascade. I also boiled 1oz of oak chips in 1cp of water, let it cool, and poured as much as I could into the carboy.

Maybe I'll remember to bottle/keg Lucky 7's in a couple of months....

I have ignored this batch since I racked it. Bad brewer.

I added .75tsp of polyclar in .5cp of water today. I am going to dry hop and oak in a couple of days.

Lucky 7's (B51) IPA to the Secondary

I just racked this batch and am trying to decide what to do next. I plan to dry hop with Cascade, add oak chips, and use polyclar. I just can't decide in what order.

The polyclar is the issue. Do I add it  now then add the hops or add the hops then the polyclar a couple of days before bottling?.. hmm .. I guess I'll think about it for a couple of days.

I had planned on adding the oak late anyway. I don't want the oak to be over powering.

Lucky 7's IPA (B51)

Yes! 7.7% , 77 IBU, 7.7 SRM, and a 77 minute boil. It's a HOP BOMB!

This is a partial mash with 2.50 lb XL DME; 3.13 lb 2-row, .5 lb Crystal20; .15 lb Crystal40; .10lb Cara-Pils. The hops: .5oz Amarillo @ 77mins; .5oz Amarillo @ 47mins; .6oz Cascade @ 27 mins; .5oz Cascase @ 7 mins. Fermented with US-05.

I planto dry hop with 1oz of something when I rack to a secondary. I haven't decided what yet. I am also going to add 1oz of oak chips. 

I batch sparged using my 2 gallon mash tun. The mash went as expected. I had a 1.033 pre-boil/pre-DME gravity. This was right on target with my estimated 75% efficiency. I forgot however to take a gravity reading before pitching, OOPS!. Since the 1.033 was on target, I am going to assume it is the 1.078 estimated by BeerSmith.  

Lots of hops in that carboy. Today it is bubbling away at 68F with a heavy krausen.
